Rose's Irish Soda Bread

My family and I adore Soda Bread, and it's one of the easiest breads to make! My one bowl version isn't your typical loaf you buy at the store. My version is littered with a variety of plumped dried fruits that have been soaking in rum (or OJ), zested with orange and lemons and have added health benefits from chia, hemps seeds and oats. That's why I call this, Rose's Irish Soda Bread.

With St. Patricks' Day around the corner, my taste buds are craving Irish food-go figure, right? But, I like to jazz things up a bit with some of their traditional baked goods. That's when I decided to play around with their traditional Soda Bread and add some of my favorite ingredients. Even though this bread is made with unbleached all-purpose flour, instead of whole wheat, don't think this bread won't keep you feeling full, because it will because it's loaded with added fiber and makes for a great breakfast or afternoon snack.

Rose's Irish Soda Bread
Pre-heat oven: 400 degree F
Yields: 1 loaf
Prep-time: 15 minutes
Bake-time: 60-70 minutes
Total-time: 85 minutes
Ingredients
1 cup mix dried fruit
Rum or Orange Juice
4 1/4 cups King Arthur all-purpose flour, or King Arthur GF 1-for-1 baking flour
1 tsp salt
2 tsp ground cinnamon, I use Ceylon cinnamon
3 tbsp monk fruit sweetener, or can sugar
2 tbsp hemp seeds
1/2 cup King Arthur regular oats
1 tsp baking soda
1 zest from a whole orange
1 zest from a whole lemon
1/2 cup chilled unsalted butter, cubed
1 3/4 cups almond or oat milk, or regular milk
1 tbsp lemon juice, or apple cider vinegar
1 tsp pure vanilla extract
1 tsp pure almond extract
1 tbsp chia seeds
Directions
Pre-heat the oven to 400 degree F.
Using a pie dish, lightly grease with butter, and set it aside.
In a medium dish, add your dry fruit, then, pour your rum or orange juice over the fruit. Make sure the liquid covers the fruit, so it can absorb it. Let it sit for about 10-15 minutes.
In a liquid measuring cup, add your almond milk and juice from the lemon. Stir and let it sit for about 10 minutes, this is going to be your homemade "buttermilk". *If you have buttermilk, then you can skip this step and just pour and level your buttermilk in the liquid measuring cup, and set it aside.
In a large bowl, whisk together your flour, salt, baking soda, hemp seeds, oats, cinnamon, orange zest, lemon zest and sugar or sweetener.
Add your chilled cubed butter. Using clean hands, begin crumbling your butter within the flour mixture until your butter resembles peas; try to avoid having large chunks of butter in your mixture. Then, make a well in the center and add your "buttermilk", vanilla and almond extract and chia seeds.
Discard the liquid from the dried fruits and add just the plumped fruits to your flour mixture.
Now, use your hands to bring the dough together. Have some extra flour set aside incase you need a bit more for your dough, or hands. This is the messy part, but try to have fun.
Once you've brought your dough together, form a ball. Transfer it to your prepared pie dish and lightly press down to somewhat flatten the dough.
Use a chopping knife, cut almost to the bottom of your dough into quarters.
Bake for about 60 minutes, or until your bread is a dark golden brown.
Allow the bread to cool for about 30 minutes before sharing with friends and family.
Enjoy with butter and jam!
