My Oat Flour Crepes possess a subtle nutty taste that complements various fruits, particularly apples. They're easy to prepare and rich in minerals and vitamins. An excellent way to begin the day!

Oat flour is a high-fiber alternative to regular flour, thanks to its rich beta-glucan content, which aids in lowering cholesterol, enhancing gut health, and increasing satiety. It is beneficial for heart health, blood sugar regulation, blood pressure, weight management, digestion, and skin health. If you're seeking a healthier substitute for all-purpose flour in crepes, oat flour is an excellent choice! My Oat Flour Crepes are easy and quick to prepare, and they pair wonderfully with sautéed or roasted cinnamon apples and a light drizzle of pure maple syrup. You can freeze the crepes by placing parchment paper between each one and sealing them in a freezer bag for up to a month. To reheat, simply use a skillet on medium heat until the crepe is fully warmed.
Oat Flour Crepes
Yields: 8 crepes
Prep-time: 5 minutes
Cook-time: 5-7 minutes each side
Total-time: ~ 30 minutes
Equipment: 1 large skillet pan, 1 large mixing bowl, spatula, whisk, measuring spoons, measuring cups, liquid measuring cup, sifter, ladle, cutting board, paring knife and small sauce pan.
Crepe Ingredients
1 cup oat flour, sifted (you can use GF oat flour)
1/2 teaspoon salt
2 eggs
1 cup oat milk, or any non-dairy milk or regular milk
1/2 cup water
2 tbsp vegan butter or regular unsalted butter, melted and slightly cool
1 tsp pure vanilla extract
2 tbsp cane sugar, or monk fruit extract powder
2 large apples, finely diced
cinnamon powder, I use Ceylon cinnamon
Directions
Pre-heat your large skillet pan on medium heat.
Finely dice your apples and place them in the pan. Turn the stove on medium heat and add a dusting of cinnamon and a teaspoon of water. Stir with a spoon, then let the apples cook, stirring often.
Next, sift your oat flour into your bowl. Then, add in salt and sugar and use a whisk to blend the ingredients. Make a well in the center and pour in your oat milk, water, eggs, vanilla and melted butter.
Whisk until the ingredients are fully mixed, resulting in a smooth batter. *Aim for a thinner batter consistency; if it seems too thick, add a few tablespoons of water to thin it out.
Melt butter in your preheated pan and spread it across the bottom. Use a ladle to add the batter to the pan. Rotate the pan to ensure the batter covers the entire bottom. Note: Only pour a thin layer of batter, sufficient to cover the bottom.
Cook the crepe for approximately 5-7 minutes per side until it reaches a light golden brown color on both sides.
Once your apples have cooked, remove from the pan and place in a bowl and set it aside.
Place the crepe on a plate, either laying it flat to add your cooked apples in the center before rolling it up, or folding the crepe and topping it with the cooked apples. Drizzle with maple syrup or apple butter. Get creative and enjoy!
