Fluffy Pancakes

Pancakes are a breakfast favorite in my home; we makes these almost every weekend.

My Fluffy Pancakes are so simple to make, and can be made Gluten Free and Dairy Free.

I love warm pancakes on the weekends, but these can be made ahead of time and kept in the freezer for the week days. My Fluffy Pancakes are so simple to make, and can be perfect as a quick breakfast during the week. All you need to do is let them cool, wrap each one in parchment or wax paper, covered in foil then in a freezer bag and voila! Just toast them in the toaster during the week and you can have pancakes for breakfast every day!




Fluffy Pancakes


Yields: 8 pancakes

Prep-time: 5 minutes

Cook-time per batch: ~8 minutes

Total-time: 20-30 minutes


Ingredients

  • 2 1/4 cups all-purpose flour, or Gluten Free Baking Flour

  • 1/2 tbsp corn starch

  • 1/2 tsp salt

  • 2 tsp baking soda

  • 2 eggs

  • 1 tsp pure vanilla extract

  • 1/2 tsp pure almond extract

  • 2 tbsp canola oil, or 3 tsbsp melted unsalted butter

  • 1 3/4 cups nondairy milk (I use almond milk) or regular milk

  • 1 tbsp sugar

  • butter for pan

Directions

  1. Pre-heat a large skillet on medium-high heat. Add some butter to grease the pan. Use a brush to spread the butter around as it melts. Keep an eye on your pan so the butter doesn't burn.

  2. In a large bowl, whisk together flour, corn starch, salt, and baking soda. Make a well in the center and add the milk, oil, vanilla and almond extracts, sugar, and eggs. Use a whisk to blend all the ingredients together, but don't over mix. The batter should be somewhat smooth, but it's ok if there are some lumps. The consistency should be somewhat thick, but not too thick.

  3. Use a 1/3 measuring cup and scoop the batter. In a circular motion slowly add your batter to the heated skillet. Depending on the size of your skillet, you should be able to make three or four medium size pancakes.

  4. Heat each pancake for about 3-4 minutes on each side. To know when to flip, you will see small bubbles forming around the edges on top of the pancake, this is a good indicator that the pancake is ready or almost ready to flip. You want a nice golden color on each side.

  5. Repeat until the batter is all done.

  6. Top your pancakes with warm maple syrup and fresh fruit. Enjoy!
