Easy Tzatziki Sauce or Dip
By Rose Huxford

A few years back, I was planning on making Gyros, a family favorite. I used to just pay the $7 for the Tzatziki sauce/dip when I realized that I was paying way to much for something that really wasn't that hard or time consuming. I decided to not purchase the Tzatziki but read the ingredients on the back of the container. When I read all I needed was a cucumber, plain yogurt, some seasonings and garlic, I was elated. I already had most of those ingredients, I just needed to grab the yogurt and cucumber. When I came home, I made my own Tzatziki sauce/dip and discovered it was one of the easiest things to make. I hope my Easy Tzatziki Sauce or Dip becomes a new family fav in your household!

Easy Tzatziki Sauce or Dip

Yields: 1 medium container

Prep-time: less than 10 minutes

Marinate-time: at least 45 minutes

Ingredients

  • 1/2 cup cucumber, shredded

  • 2 1/2 tbsp plain Greek yogurt

  • 1 garlic clove, minced

  • 1-2 tsp dill

  • 1-1 1/2 tsp salt

  • 1/4 tsp ground black pepper

  • 1/4 tsp ground garlic powder

Directions

  1. Rinse off a cucumber and shred about 1/2 of it onto a cutting board.

  2. Then, using a clean tea towel, place the shredded cucumber in the center. Wrap the shredded cucumber and let it sit in the tea towel for about 5-10 minutes. We want to release as much liquid from the cucumber before adding it to our Tzatziki sauce/dip.

  3. Meanwhile, add the Greek yogurt to a medium container, and add minced garlic. Next, take your tea towel and twist around the cucumber to strain as much liquid as possible into the sink. Open the tea towel and use your hands to add the strained shredded cucumber to the yogurt and garlic mixture.

  4. Add the seasonings, then use a spoon to stir all the ingredients together. Test taste to see if you want more seasonings before placing in the fridge.

  5. Cover your container and place your sauce/dip in the fridge for at least 45 minutes, so all the flavors can come together.

  6. Use the sauce or dip for Gyros, or dipping your favorite snacks!

  7. The sauce/dip should last for about a week.
