is the next best thing! It takes less than ten minutes to make and all you need is a microwave.

There are evenings when my kids are wanting a dessert, but we are all out of goodies. The Cookie in a Mug has been a life savor for these types of moments. It requires very little ingredients and very little time to make. Plus, kids can make these as the only thing they need is the microwave.


Cookies in a Mug: Chocolate Chip

Cookies in a Mug: Chocolate Chip

Yields: 1 mug

Total-time: 8 minutes


Ingredients

  • 1 tbsp butter, or dairy free butter

  • 1 tbsp coconut sugar, or brown sugar

  • 1 tbsp cane sugar

  • 1 tbsp canola oil

  • 1/4 tsp pure vanilla extract

  • pinch of salt

  • 1 egg yolk

  • 1/4 cup all-purpose flour, or GF flour

  • 1/3 cup chocolate chips

Directions

  1. In a large mug, add butter. Melt the butter in the microwave for about 30 seconds.

  2. Add in the sugars and stir to combine with the butter. Then, add in the salt, and vanilla. Stir.

  3. Next, add in the egg yolk. Stir to blend.

  4. Then, add the flour and chocolate chips. Stir one last time. Then, microwave for 1 minute.

  5. Enjoy!

For Double Chocolate Version

  • 1 tbsp butter, or dairy free butter

  • 1 tbsp coconut sugar, or brown sugar

  • 1 tbsp cane sugar

  • 1 tbsp canola oil

  • 1/4 tsp pure vanilla extract

  • pinch of salt

  • 1 egg yolk

  • 2 tbsp cup all-purpose flour, or GF flour

  • 2 tbsp cocoa powder

  • 1/3 cup chocolate chips

Follow the same directions as above and enjoy!
