Dates are packed with nutrients such as fiber, antioxidants, anti-inflammatory properties, and magnesium. Moreover, they have a low glycemic index. Pairing dates with nut butter introduces protein, which helps maintain a feeling of fullness. My Chocolate Covered Nut Butter Dates will keep you satisfied for several hours after consuming a couple. Remember, these treats are calorie-dense, so having 1 or 2 should suffice.


Chocolate Covered Stuffed Nut Butter Dates


Yields: 15 dates

Prep-time: 5 minutes

Chill-time: ~1 hour


Equipment: 1 dinner size plate, parchment paper, paring knife, cutting board, medium microwavable mixing bowl, spoon, butter knife.




Ingredients

  • 15 pitted Medjool Dates, sliced almost in half

  • 1/2 cup nut butter, I used creamy peanut butter

  • 1 cup vegan chocolate chips, or regular

  • almond slivers as your topping

  • hemp seeds as your topping


Directions

  1. Place some parchment paper on a plate, and set it aside.

  2. On a cutting board, slice your dates almost in half and make sure to remove any stems. Then, place each date on the prepared plate.

  3. Using a butter knife, spread about 1/3 of nut butter inside the center of each date.

  4. Place the chocolate chips and remaining nut butter in a medium-sized microwavable mixing bowl. Microwave in 20-second intervals, stirring after each interval, until the chocolate and nut butter are melted and combined.

  5. Immerse each date halfway into the melted chocolate mixture, then return it directly to the plate. After dipping all the dates, use a spoon to drizzle the remaining chocolate mixture over each date, nearly covering the top.

  6. Next, sprinkle hemp seeds and almond slivers, or any healthy topping you like.

  7. Place in the fridge for at least an or until the chocolate has set.

  8. Enjoy!
